🍗 Air Fryer Cheat’s Roast Dinner 🍗

Stuffed Chicken Wrapped in Bacon with Mash, Crispy Green Beans & Gravy

When you want roast dinner vibes… but you’ve only got 20 minutes!

Ingredients (serves 2):

For the stuffed chicken:
2 chicken breasts, butterflied
6 slices of streaky bacon, I love @oakparkfoods
Salt & pepper

Quick stuffing:
1 slice of bread (sourdough or GF), blitzed into crumbs
1 tbsp butter
1/2 onion, diced
1 garlic clove, crushed
1 tsp dried sage and thyme
Salt & pepper to taste

To serve:2 portions of mashed potato 200g green beans, trimmed
Your fave gravy

Method:

For the stuffing, sauté the onions in a pot with the butter, mix in the breadcrumbs, garlic, herbs, and seasoning, add a little extra butter or splash of stock if too dry.

Butterfly/Cut into the centre of each chicken breast, to create a pocket, then add a layer of stuffing inside, then fold it back over.

Wrap each breast tightly with streaky bacon (3 rashers each), tucking the ends underneath. Season lightly on top.

Pop into your air fryer basket and cook at 200°C for 15 minutes, or until the bacon is crispy and the chicken is cooked through.

Prep your mash as standard, then toss the green beans with a little olive oil, salt, and pepper and Air fry for 8–10 minutes, shaking halfway, until crispy and slightly blistered.

When the chicken is ready, slice up and serve on a bed of mash, with the crispy green beans, and pour over hot gravy.

Then enjoy your 20 minute roast masterpiece!

Air Fryer Cajun Chicken & Pesto Pizza 🍕

I love this lighter style pizza flatbread for summer, and my homemade red pesto flavours work so well as the base.

Crispy, smoky, spicy and ready in minutes, perfect for summer nights.

Ingredients: serves 1

Skinny Italian Pizza Base from @fitzgeraldsbakery.ie
Or a tortilla or flatbread  2 tbsp red pepper pesto (my homemade one) 1 small chicken breast, sliced
1 tsp Cajun seasoning  1/4 Red onion, thinly sliced 1 tbsp diced red pepper 50g mozzarella, grated Fresh basil leaves

Method:

For the chicken, rub the breast with a little olive oil then rub in the Cajun seasoning and air fry for 12-16 minutes (depending on the size of the breast) at 200c on the standard air fry setting.

Spray a pan with a little olive oil then add the pizza base into the pan.
 Spread the pesto right to the edges.
 Top with sliced Cajun chicken, red onion, and red pepper, I used some of the air fried pepper from my pesto recipe. Then add the cheese.
 Toast the bottom in the pan until crisp and golden.
 Finish under the grill until the cheese is melted and bubbling.

Then add some fresh basil, slice and serve!

CHEESY TACO PASTA 🍝

This is one of my favourite recipes to make 😍 It’s also high in protein and perfect for meal prep! Save for later☝🏼

•458 kcals per portion
•35g PRO, 53g CHO, 13g FAT

Serves 4:
-240g of uncooked pasta of choice (save pasta water)
-Oil spray
-400g of beef mince (less than 5% fat)
-1 pack of taco seasoning
-1 red pepper, chopped
-1 green pepper, chopped
-200g of salsa
-30g of 0% non fat Greek yoghurt
-50g of reduced fat mozzarella ball
-70g of cheddar/mozzarella
-Fresh parsley, chopped

Method:
1. Boil the pasta for 8-10 minutes until al dente. Drain, set aside and keep pasta water.
2. Spray a pan with oil, add the mince and break down. Cook until browned then, add the taco seasoning and mix well.
3. To the pan add the red and green pepper. Cook until softened.
4. Add the salsa and yoghurt and mix well.
5. Mix in the cooked drained pasta and 100ml of pasta water. Let this simmer for 5 minutes until the sauce reduces. Add more water if needed.
6. Break up the mozzarella ball and mix in the pan. Top with the cheddar/mozzarella. Cover with a lid for 3 minutes to melt the cheese.
7. Once the cheese has melted, divide into four portions. Top with chopped parsley.

CREAMY GARLIC & HERB CHICKEN PASTA 🍝

This is a go to dinner for me when I want something quick and easy but also high in protein! Make sure to save for later☝🏼

•483 kcals per portion
•43g PRO, 53g CHO, 14g FAT

Serves 2:
-120g of uncooked pasta
-200g of uncooked chicken breasts
-1 tsp of garlic powder
-1 tsp of garlic salt
-1 tsp of Italian seasoning
-Oil spray
-1 tsp of butter
-1 white onion, finely diced
-2 cloves of garlic, minced
-1 tsp of paprika
-1 tsp of chilli flakes
-30g of garlic & herb cream cheese
-1 chicken stock cube in 200ml of boiling water
-80ml of light cream
-1 tbsp of parmesan plus 2 extra tsp for the topping
-Fresh parsley, chopped

Method:
1. Beat down the chicken breasts. Season with garlic powder, garlic salt and Italian seasoning. Spray with oil and air fry or cook in the oven at 180C for 15-30 minutes. Slice once cooked.
2. Cook and boil pasta for 8-10 minutes until al dente.
3. Heat a pan on medium heat and add the butter. Let it melt then add the onion and garlic. Fry until softened and season with paprika and chilli flakes.
4. Add the cream cheese and stock and mix well. Then pour in the cream and mix again.
5. Let the sauce simmer and reduce (add more water if needed). Then, add the pasta, chicken and stir through. Season with 2 tbsp of parmesan.
6. Divide into 2 portions. Top each portion with a teaspoon of parmesan and parlsey.

Enjoy!

Back with another belter from the beautiful nation of Vietnam.

Vietnamese chicken salad or Gỏi Gá is everything you want in a salad. Super fresh, crunchy, bright, herby, spicy and light enough that you can pound loads of it and not feel like you ate a big bowling ball. I love it.

The real takeaway from this is the dressing - Nước chấm - kind of like a Vietnamese mother sauce built on a rough ratio of 1 part fish sauce : 1 part lime juice : 1 part sugar : 2 parts water - add chilli and garlic to your own tastes and throw it on everything.

Sofrito cooked soft, hot sausage in a rich tomato sauce cut with creme fraiche and slicked with a heap of cheese.

This week’s @sundaytimesireland restaurant review is already live on the app and website — the beautiful new addition to Belfast, @beau.belfast, by @lottienorenchef ✨

Her partner @jonny_elliott1 opened @edorestaurantbelfast in 2017 and now the pair have a second restaurant in their stable, this time a more classical French-tinged but modern, pan-European menu of small plates made to share, different to the more Iberian bent of Edō

We write “Dish of the day is a stunning butter-poached halibut, with layers of pearlescent flesh that give at the gentlest nudge and a heady brown crab sauce that hums of the seaside and has been slightly aerated to lighten with a small spoonful of trout roe on the side. It leaves such an impression that days later we can still taste it.“

Aside from a somewhat stellar line-up of dishes ordered, what’s truly stellar is service — “near 10/10, utterly charming, engaging and humble, punctuated by a bit of quick-witted Belfast banter. The space, menu and service are all serious without taking things too seriously.”

Hawker will be a ‘little sister’ they say, focused on takeaway, with some Hang Dai favourites on the menu including my personal favourite sweet and sour pork. yum. I for one can’t wait until their menu is live on my phone to order to my gaff 😆 also reminded me what a super spot Hang Dai is, so much fun, the food is always delicious and I’ll be back soon for more as it’s been way to long.

My Brazilian wife made me her favourite Brazilian bread. Not just hers. Think of a nation wide favourite. 🇧🇷 Brazilians eat this for breakfast every morning. Think French baguette but much lighter and with a thinner crust.

We will be posting a magical and nostalgic recipe per week and we can’t wait to share all these nation wide favourites with everyone! Padarias are huge in Brazil and these treats have great cultural importance for us. We hope you love it. 💕

Gostinho de Brasil com transporte imediato para aquela padaria com um pingado de acompanhamento. Ficou idêntico ao do Brasil. Eu estou TÃO feliz com essa receita, que já estou com vários planos de uso para esses pãezinhos!!! Pão na chapa, misto quente, bauru, hot dog…. Ah! Fala pra gente de onde você é e qual é o nome desse pãozinho na sua cidade: pão de sal? Cacetinho?

Ingredients
555g strong white bread flour
10g granulated sugar (2 tsp)
10g instant dry yeast (2½ tsp)
10g salt (1½ tsp)
1 tbsp diced butter (cold)
300-340ml cold water (we used ice water)

We used a stand mixer with a hook attachment but this recipe can totally be made by hand too, it will just take a little longer to knead. :)

And don’t forget to dunk it in your hot drink! ☕✨

Tip: We recommend using a perforated baguette tray and covering the rolls with a deep tray to help with circulating and retaining more steam but this is totally optional. :)

My Brazilian wife makes me a typical Brazilian breakfast 🇧🇷✨

This is the quintessential Brazilian breakfast. It’s a French-style bread roll sliced in half, spread with butter, and toasted on a hot griddle, a classic in Brazilian bakeries (padarias).

Pingado: coffee with a dash of milk (literally “a drop”), usually served in a simple glass.

Some people eat this combo standing at the counter before work. Do yourself a favour and make up a batch of Brazilian French bread (pão francês) and start your mornings this week like a proper Brazilian ❤️💚💛

This combo is particularly popular in São Paulo, where I’m from. In other parts of the country, a typical breakfast might include cuscuz (steamed cornmeal), tapioca, pão de queijo (cheese bread), or cake with coffee, depending on the local culture.

Ingredients:

-1 fresh pão francês bread roll, sliced in half
-Butter @kerrygoldirl
-Your favourite coffee with milk

Method:

Liberally spread the butter (be generous!!) on the inside of the bread.

Now fry in a hot frying pan, flattening it slightly with your spatula so all the butter becomes golden and crispy. Add some extra butter to the pan if you feel like it. ;)

Stick on some samba or bossa nova and enjoy your baguette dipped into milk and hot coffee (optional but recommended). 😜
